Is Boiled Chicken Okay To Feed For Both Meals, If not what is best for her to eat

Hey all! My baby is a recently diagnosed diabetic currently taking 5U of Vetsulin BID. For awhile we were rocking along around in the low 200's when she was on Royal Canin Glycobalance Meaty Morsels with the Royal Canin GI as a topper. Shortly after her BG began to spike, and she was never satisfied she was ravenous. I also noticed her Yowling after every single meal, which is unlike her.
My vet told me Glycobalance is what is best, and she has to eat it topped with some of the Royal Canin GI to keep her GI tract running smoothly since she also has IBS to top all this off. However Sapheria being the picky princess that she is quickly began to turn her nose to it. She would only eat the GI, and would lick the Gravy from the Meaty Morsels. Pretty quickly she would turn her nose to both all together.
I know diabetics need to eat in order to get their insulin, so i began supplementing with boiled chicken breast. She goes nuts over it, I give her about a handful each meal and that keeps her satisfied for the better part of the day. I have noticed that though she is still drinking quite a bit of water, however her coat is softer, her attitude has changed, and she seems to be getting back to her normal self. This is all within the one week I have been giving it to her.
Upon some research of my own and a fellow Reddit poster who pointed me your way, I have learned cats need the amino acid Taurine. Now I know cats are inherint carnivores, however her being on just strictly chicken breast, I worry she may not be getting all of the essential nutrients she needs. Im curious to hear thoughts and opinions on an all chicken diet. If this is an unsafe move I am curious to know what is the best canned food I can give her that has all of the essential nutrients.

Short answer is no, a diet of only boiled chicken does not contain all the nutrients a cat needs. It's OK to use to supplement the diet or for treats but that's all.

Any 'complete' commercial cat food will contain all the proteins, fats, fibre, minerals, amino-acids, vitamins, etc. that a cat needs.

Commercial 'complementary' cat foods do not contain all the nutrients a cat needs and need to be fed alongside a complete food.

Some people make their own cat food using meat and a premix product (contains all the additional nutrients required by the cat). I'm tagging @Wendy&Neko to ask her whether she can tell you more about that when next she's online.

Regarding your question if you can not only give her the boiled chicken with out any supplements Taurine being one of the most important ones because taurine deficiency can cause heart problems, if you want to make your own food (it can be chicken) you would need to add some suplements, you could make it all from scratch and in Dr. Lisa's web page you can find the best recipe (here´s the link https://catinfo.org/making-cat-food/) or you could get the protein and ad a premix like a lot of people here do, you may want to post an especific question regarding premixes for home cooking suggestions and I'm sure a lot of people can give some

If you want to give comercial food there are some options and maybe you can try a few of them and see if there's one she likes here's the link to Dr. Lisa's list that we use here http://catinfo.org/docs/CatFoodProteinFatCarbPhosphorusChart.pdf in this list you want to get one that is 10% or less in carbohidrates and as high in protein as possible
