How do I interpret 320mg?

Yes that is what you could expect in an unregulated diabetic cat.
I would encourage you to set up the spreadsheet and record all the BGs on it.

I would get another test in around +4 or +5 ( 4 or 5 hours after the dose of insulin) to see how low the insulin is taking Cole. If there is a big drop I would test again in 1/2 hour. Post and ask if you are concerned.
We recommend feeding before the shot and again a couple of times during each cycle.
