How can evo be low carb!?

Because it does not have "heaps" of those. veggies are typically low-carb.
Yes, Evo Cat and Kitten is low carb, less than 10% carbs. Evo Salmon is a little higher carb. Evo makes other dry that is high carb
 
The dose makes the poison. If less than 10% calories from carbohydrates, its OK to feed.

Not all veggies are created equally some are higher in carbs and sugars than others. And it is the dose that makes the poison. The further down on the list of ingredients then smaller the amount in the food. So if apple is almost the last thing listed then there is very little of it used in making the food. If it's the first, second or third ingredient on the list than that can be a red flag.

Like when as humans we go on a diet, peas because they are high in natural sugars we have to measure them into a certain portion size, but green beans you can stuff yourself on. Even veggies from the same family aren't created equally...Iceberg lettuce is basically like eating air, it is filling but is empty of nutritional value but the flip side is Romain lettuce just as filling but chocked full of vitamins and nutrients. A rabbit will starve to death eating nothing but Iceberg but thrive on Romaine.

Oh wow, I didn't know about those different lettuces!! That's really interesting.

What I find difficult also is the total lack of option available in Australia, as well as the fact that when I try to use the calculator on various foods that are available here, I cannot because they haven't listed the moisture content or the ash or the fiber.
 
To determine what you can feed, contact the manufacture for the data you need - the as fed and the dry matter basis values.. Then you can choose the most useful options.
 
I've actually been doing that today. I've emailed Snappy Tom which makes a brand called Ultimates, which SEEM ok but who knows. I contacted Fancy Feast (again). That's about it really. We're going to some pet shops this weekend to see what other brands are out there that are only sold in actual pet shops.
