Help with dry food

hi everyone
While talking to the internist yesterday she said for now I should keep some dry food in the mix because he's having so many food issues
My problem is the food I have is very high in carbs so I would like to at least get something lower
I did get some young again samples in the mail but I would like to try that a little later
I looked at the chart and I'm very confused.
I see a wellness core but I cannot figure out which one it is and to be quite honest I am confused how to calculate
I would appreciate if anyone could help me.
My goal is to ween him off. But for now eating is important.

I use Evo Turkey and Chicken Cat and Kitten food for some of my cats.
My cats do not really like any of the Wellness Core dry foods. Young Again was so so. I have also used Wysong Epigen 90 but that was also so so my cats.
 
My kitties move from the YA to EVO to Origen 90% . They won't eat the same thing 2 days in a row. They want variety. I wish I could get the one off it altogether but it is what it is.

My cat LOVES the EVO. But he doesn't get it a lot.

My civvie eats Wellness Weight and she doesn't seem to mind it... But that one is still pretty high-carb.
