I know it's been said that you only hear from people when they are in crisis so this board can be a little discouraging so I wanted to share a happy story 
Putty has been off insulin except for the initial 10 days when first diagnosed (and a brief relapse when he got into some dry dog food) by switching him to wet food. He is one of the lucky ones to be diet-controlled. Thanks so much to those here who supported me when he was diagnosed. I was a WRECK to say the least! I check him about once a month now and keep a close watch on his litter box and behavior (that's how I caught his initial diagnosis). Hopefully he will stay in remission for a LONG time! Thanks again to everyone and I wish the best to all you and your kitties!
