Cat losing weight

Hello there.

So Maahes, has been losing weight again, and is almost to the point of weight loss pre-diagnosis. I'm concerned because none of the other cats have lost weight. Behavior hasn't noticeably changed.

(Dx March 14). He is well regulated on Prozinc insulin, staying below 250 at all times, with a nadir between 80 and 120. Depending on his pre-shot level and whether he gets a high carb treat (gooshy food with gravy), he gets either 2 to 2.5 units. twice per day between 11-13 hours apart. He is on a wet food friskies diet, with Young Again kibble available all day for free feeding. Between 4 cats, they get 22 oz of wet food a day, mixed with water until it's a soup. He does have the occasional vomiting episode where he will vomit 10 times in a row, but hasn't had one of those episodes in over a month. He does have really bad stomatitis, but I cannot afford the cost of having most of his teeth extracted at this time. As far as I can tell, it hasn't affected his eating (or biting) habits and his appetite appears unchanged, although I discovered that he has been the one pulling the trash can down and rummaging through it. (I'd been blaming the other cats). He has a history of eating plastic (in fact found vomit covered plastic today!), but his pooping habits are on point. Peeing, purring, pooping, playing are all normal.

Anyway, TL;DR, do you guys think I have anything to worry about? The weight loss hasn't been particularly fast, but it's extremely noticeable to me. During the regulation process he had gained weight, but now that he's lost nearly all of the gain, it's concerning. I took him to the vet last week, but vet thought he was fine (wouldn't even prescribe medication for the stomatitis!). I really want to avoid taking him to the vet because frankly, I'm still furious at his vet for his treatment of us last week.

The vomiting and weight loss suggest the possibility of inflammatory bowel disease, maybe hyperthyroidism, or GI lymphoma to me.
