Having the feeling that some veterinary practices are really just pushing / gouging products and prices unnecessarily for diabetic pets, is are any Veterinarians in New Hampshire that could be recommended who might have familiarity with the use of human glucometers and test strips?

Where are you in NH? My vet originally didn't think that a human meter would work, but I tested it against theirs (several times, different appointments) and they were convinced.

See my signature link Vet Interview Topics for some questions to use in selecting a vet.
If you start with this Google Maps search for "veterinarian near NH" and add in your full address, it will map the vets near you and may link to some reviews of the vets as well

See also BJM's Glucometer Notes in the link above. Not all vets are familiar with using human glucometers on cats. If not, the Glucometer Notes are helpful to show to the vet you wish to work with. A good vet will support your wish and need to home test.
