Hi Kit, bouncy Mikan after green yesterday. I guess it’s the price to be paid for those greens. Sigh. o_O

It seems Mikan behaved so you could have company for dinner last night without worry. I hope it went well. I’m still thinking about that eggplant lasagna. Yum:joyful:

I hope she has a gentle slide down to drama free blue and green today. Hope you enjoy the Holiday. (So happy to have the extra day off!!)

Well, hopefully she'll slide down slowly and non-dramatically!
The eggplant lasagna was a big success! Mixing spinach into ricotta cheese made it very flavorful! :woot:
But made too much. There is so much left. I wish cats could eat them.....:p
Isn't it great to have Monday off? I wish we had that EVERY WEEK!

Can you freeze some? For those days where you just don't wanna cook - then you can just thaw some and there's dinner!
Alicia, yes! Awesome idea. I can vacuum pack it and freeze it.
There will be plenty of evenings that I can use a little break :p
I love eating and normally I don't mind cooking, but there are certainly days when I wished we could just open a can and eat like our kitties do :p:p:p

I do that every time I make a lasagna. Freeze half ! Because there are definitely days I can’t or don’t want to cook!!

Yup, freezing is the way to go! I'll do that.
Freezer and vacuum packing are two most important inventions! ;)
Not sure how eggplant will freeze but can't get too bad, can it?
