I would not go back to 8u. I would think it's a good time to consider testing Mr. Grey for acromegaly and IAA. While you did start too high of a dose, you did back down and start over at 2u fairly, so it's looking like you've got yourself an insulin resistant cat.
I take it that you are feeding better food now, as in the low carb wet mentioned on your ss, and the dry food you were feeding in December is gone, yes? If the diet is proper and you are at 8.5u BID, it may be time to have the 2 tests done.
You are holding your dose plenty long enough and the lowish numbers are more like a breakthrough on the resistance but they are not holding yet. Until you get the lower numbers that hold and stick around for a few hours and then longer, up you go in dose. One blue does make a good reason for a hold, low increase or a decrease; stick to your .5u increases until 10u at which point, increases are best at 1u, then after 20u, you can get a bit fancy with a 2u up, then a 1u back.
If you think of a tug of war, it may be more clear. When you up the dose, you think you are getting somewhere because you get better numbers right away, but then the resistance pulls back on you, so you hold the dose as per protocol for a diabetic cat, then up you go again.
It may also be an idea to consider switching to Levemir as there is said to be a sting to Lantus at higher doses. Another advantage to Levemir is that many cats seem to mellow out and have more level numbers on Levemir, including my first acro, Shadoe. She was more nervous and tense, jumpy on Lantus but she was much better after the switch to Levemir.

IGF-1 (Acro) Test
You are doing fine, and it's a good thing you posted to ask as backing down is not what's needed.
You have to be stronger than the resistance.
