On your question as to how much to leave, you just kind of have to go by your gut feelings...how well he responds to higher carb food, how long it keeps him up, does he have a pattern of diving back down...how long before you can test again?...all kinds of things go into that decision
You know how much you had to feed to get up to come up above 50...so you want to leave down enough so if he drops below again, there's enough to get him back up
The problem (in my house anyway) with leaving just gravy down would be it wouldn't last 2 seconds before it'd all be gone! When I've had to leave China, I'd leave more of the "whole food" instead of just the gravy, but China also seems to "like" to stay in the 40's (which is a headache for me, but she seems to do great)
It's more of that ECID thing...but in the long run, it's much more important that you do whatever you have to do to keep Peyton safe...even if it's to really carb him up. If he goes high, he'll get back on track soon enough, and it's safer than not giving him enough carbs and having him drop too low
