12/20 Monty: feeding question

Hey all. In my city (London) we have restrictions in place over the next two weeks to control the spread of COVID.

My partner and were planning to stay with a friend who lives alone from 24th to the 26th and we had a cat sitter booked. As of yesterday the government has tightened lockdown and our cat sitter is forced to cancel. We're figuring out how to feed Monty on Christmas.

I can come home on Christmas morning and feed him, but it's a 3 hour walk there and back in total. I want to avoid doing this twice on Christmas so I was planning on just leaving a crapload of food available for Monty, feeding him once only - what's the impact of this on a diabetic cat in remission?
 
Can you get a timed feeder? If I were to leave out food for my guys, it would be gone within the first hour or two. The other issue is if you're feeding canned food, it may not stay fresh. Is there a neighbor who could feed Monty? Or, can you bring him along with you?
 
I have a timed feeder, however I have two cats and I'm concerned that this sister will eat the food before he notices. I suppose I could just put extra food for a single day. The feeder has a tray for ice under the bowls to help it stay fresh longer.

My friend has a dog so taking Monty is not an option :D. It's illegal to mix households except for people who live alone at the moment in my city so no neighbors.

Is potentially overfeeding him for a single day problematic? His food is 0% carb.
