Is anyone baking holiday goodies for work, friends, and family? This weekend I'm making Peppermint Crinkle Cookies I've never made them before but they look really good and yummy :-D And pretty easy to make, too. I'm camping out in Mom's kitchen. It's bigger than my kitchen, her gas oven cooks things faster than my electric one, and no crazy too-curious-for-their-own-good cats trying to climb inside the oven :shock: ohmygod_smile

Most of the cookies will be given to the management team at work: the boss (I had to bribe him with cookies the other day to get an order approved :lol: ), my manager, the business team. I guess I should give some to the other manager as well since his desk shares the same open office space as the rest of management. Plus if he has his own cookies, he won't take someone else's (yes, that has happened before :? ).

I think Mom's making more almond cookies this weekend as well. Her cookies are really good but really unhealthy - the really old recipie she uses calls for a whole pound of real lard :shock: plus another pound of vegetable shortening :shock: :shock:

What's your favorite goodie to make for the holidays for sharing and giving? :smile:
 
I've already made some Mincemeat cookies for my DH. The batch is almost gone (of course, I had to give our mail carrier 1 dozen... Told Dh about it when he came home that night, and he practically pouted. :lol:
 
I am not baking this year...but candy making...yes! I do chocolate covered oreos, graham crackers, pretzels, nutter butters and bark. If I have time to do a few cookie batches, I will.

I make my grams recipe for fudge. Melt the chocolate, beat it, beat it, beat it. drop a ball in water.. until it's "just right" then spread and cool. It's a pain, but we've done it since we were little kids. I think i'm going to try the recipe on the marshmallow creme jar and save hours.

Coconut Cream pie...and another one...and another one...'cos we keep eating them instead! I also make peanut brittle every year as well as an old 'depression era' candy called 'Potato Candy'. Here's pics of that one from google:

There are specific recipes out there but I don't bother - boil small potato, drain, smash then begin mixing confectioner's sugar with it until it makes a ball. Roll out to about 1/4" thick on wax paper, spread it with peanut butter and roll into a tight log from long side. Refrigerate for several hours until firm - cut into slices and enjoy! I guarantee NO ONE will EVER guess what it is. It's YUMMY!
 
Oh, those mincemeat cookies sound good. Do you mind sharing the recipe for that?

The cookies came out yummy :-D I had to make 4 batches :o One batch is supposed to make 48 cookies but I didn't get that many. I found that using a spring loaded ice cream scoop (1/2 inch size) really helps form balls of the sticky gooey dough.

The potato candy sounds interesting :smile: I'll have to try it :smile:
 
I've done red velvet crinkles. Tomorrow is the day I make Christmas stollen but I will do 5 loaves and freeze. Thursday is cheese baby day, which is a happy day in my house. I do plan on doing peppermint bark as well.
 
I made chocolate crackle cookies a couple of weeks ago for an event. They didn't last. :smile: I like the idea of a peppermint version. A traditional cookie here it's almost time to make is the chocolate dipped cappuccino shortbread cookie.
 
Here's the recipe for the vanilla cookies I made today: a very simple, yet, to my mind, elegant cookie. I got the recipe years ago from my Auntie Elsie, who got it from her friend, Mathilda. We call them "Mathilda's Cookies":
3/4 c. unsalted butter
1 c. granulated sugar
1 egg
2 teasp. vanilla
1 1/2 c. flour
1/2 teasp. salt

Cream butter, sugar, egg, vanilla. Work in flour and salt.
Drop by 1/2 teaspoons onto greased cookie sheet. Flatten with wet fingers.
Bake 8 minutes at 375 degrees.

They should look pale golden with a browned edge. If they don't look "done", bake another minute or two. Let them harden on the cookie sheet for a couple of minutes, then cool on wire racks.

I make truffles. One pkg Oreo cookies....put in food processor until they are crumbles. Transfer to a bowl and stir in 1 pkg of softened cream cheese. Roll into balls. I buy Ghiardelli white, milk, and dark chocolate bars you find in the baking section of the store. Melt chocolate in a double boiler and dip rolled balls into the chocolate. Put on wax paper to set.....store in frig.

You can buy different types of Oreos and mix and match with the different chocolates.
