Hey all LLanders--Here is the broccoli pie recipe that is 4 ingredients & even kids will eat:
2 pkgs frozen chopped broccoli
1 8 oz. pkg Velveeta cheese- You are using 4 oz. cubed
1 Roll of Ritz crackers crushed
1/2 stick of butter
Take Ritz crackers & crush them -put into a greased caserole or baking dish.
Take buttter & melt it then spread over the crackers & mix it in.The crackers absorb the butter!
Cook the frozen chopped broccoli, drain, and place the cubed velveeta cheese into the broccoli.
Mix till the cheese is melted into the broccoli( or put mixture into the microwave for 12 seconds to melt cheese)
Now spread the cheese & broccoli over the crackers & Wallah!!!
Cook at 350 degrees for 20-30 min. till crackes look browned!

how could that not be yummy?! sounds delicious!

i have a to die for sweet potato recipe - it's for a crockpot but i'm sure you could do it in an oven and just cook til the potatoes are tender. I found it last year when we were kitchenless from Thanksgiving week through Christmas (who planned that timing for a remodel anyway?)

Crockpot Sweet Potatoes with Coconut and Pecans

peel about 2 pounds of garnet yams, slice 1/2" thick and layer slices into a greased crockpot.

melt 1/4 cup butter, add 1/4 tsp each vanilla extract & coconut extract (author said that was very important - i could only find artificial flavoring) and pour over potatoes.

mix together 1/2 cup brown sugar, 1/4 cup each flaked sweetened coconut and pecans & sprinkle over top.

Cook on low 6 hours until potatoes are done when you check with a fork. To die for.

We used 5 pounds of potatoes and I doubled all the rest.

and these potatoes - not exactly weight-watcher friendly, but what the hey - it's a holiday!

Garlic Mashed Potatoes

6lbs unpeeled yukon gold or red potatoes, chunked
2.5 cubes butter*
6 oz romano cheese, grated (i used one container of 3 Cheese Italian shredded cheeses)
1/3 cup chopped garlic (we used one head of garlic & could've had more)
1 TB salt

Bring large pot of salted water to boil, add potatoes, cook til tender but firm. Drain. Mash but leave chunky (I mashed one time through the whole thing.)

Melt butter in skillet, cook garlic in butter until golden (don't burn), pour into potatoes. Add salt and stir together.

If serving right away, add cheese as well. If serving later, keep warm in crockpot and add cheese right before serving.

Serves 12 Lots of calories, but worth it.

*this is the heart-healthy version - the actual recipe called for 1 lb of butter, ie, 4 cubes. :shock:

Here's one that I recently saw posted:

No Bake Nutella Peanut Butter cookies

No-Bake Nutella Peanut Butter Cookies
Yields approximately 2 dozen cookies (recipe can be doubled for a crowd)

3 tablespoons butter
1/2 cup granulated sugar
1/4 cup milk
1 tablespoon unsweetened cocoa powder
1/4 cup peanut or hazelnut butter
3/4 cup Nutella hazelnut spread (or 1 cup chocolate chips)
2 tablespoons hazelnut liqueur, like Frangelico (optional). Can use vanilla extract instead.
2 cups rolled oats

In a medium to large saucepan, melt the butter over medium to medium-low heat. Add the sugar, milk, and cocoa powder and mix until combined. Stir in the peanut butter, Nutella, and Frangelico until melted, followed by the oats. Continue mixing until all of the ingredients are incorporated. Reduce heat to lowest setting.

Working quickly, use a spring-form ice cream scoop to shape balls of dough and place them on a parchment-lined sheet pan. Refrigerate for thirty minutes until firm. Store in an airtight container.



I haven't made these yet but it looks so easy :smile: I'm thinking of making these for Dr. B :smile:

I like this recipie for smashed potatos with creme fraiche I just made some two days ago. Very yummy and easy to make :smile:
 
Tired of the same old cranberry relish....

Skip the stove all together with this recipe:

Cranberry Salsa Recipe

Ingredients
1 1/2 cups of fresh or frozen cranberries
1/2 an apple, peeled and cored
Chopped serrano or jalapeno chili to taste (about a half a chili, but taste for desired heat)
4 Tbsp sugar
Zest of one orange
2 Tbsp chopped fresh cilantro
Dash of lime or lemon juice
Dash of salt


Method

1 Either grind cranberries and apple together in a grinder, or pulse in a food processor until coarsely shredded, around 10 short pulses.

2 Combine shredded cranberries, orange zest, chile, and sugar in a medium bowl. Let sit 15 minutes for the cranberries to macerate (soften in the sugar). Add cilantro, lime juice, and salt to taste.

Makes a little less than 2 cups.


Just made my batch for Turkey Day....uh...don't think it will last until then... :lol:
 
ooh! So much yummyness going on in here tonight!!

I'm making an italian sausage (I use a locally made turkey version) & mushroom stuffing (I blend the two variations together) which is heavenly and I'm trying out aBrie & Chive Biscuit recipe this year. Last year's Real Simple Thanksgiving issue had so many great recipes. Also making [url=http://www.realsimple.com/food-recipes/browse-all-recipes/sauteed-escarole-leeks-00000000044579/index.html]greens and honey orange gingered carrots[/url]. Plus mashed potatoes and maybe sweet potatoes or butternut squash too. Plus a brined & herb roasted turkey breast. Is it dinner time yet????? :lol: :lol: :lol:
 
I am doing an after Thanksgiving Thanksgiving dinner tomorrow so I was looking for something different....I mean, having the turkey, stuffing, mashed potatoes, corn casserole, and Brussel Sprouts, but wanted to do try a different recipe....that is one of MY traditions, lol....use the family as guinea pigs at Thanksgiving, lol!! So I am trying the crock pot sweet potato recipe. I'll let you all know what the family sez!!
