Happy Thanksgiving to all my LL family members who celebrate it, and Happy Thursday to everyone else :lol: !

Nice, easy day for Trix and beans so far. I've been busy in the kitchen all morning. Since DH and I are vegan, we don't do turkey, but we do everything else to the max...stuffing, lumpy mashed potatoes, shitake gravy. This year, I made a Lentil Mushroom Loaf stuffed with seasoned potatoes as our main course...it's prepped and ready to go into the oven later today...can't wait to taste it! Mashed potatoes are done...we like to pan fry them so they are crispy, so I'm able to make them ahead of time. DH is making the shitake gravy now, I made (vegan) pumpkin cheesecake last night, and all the ingredients for the stuffing are currently on standby till later this afternoon. After we gorge, we head over to my folks for dessert.

Hope y'all had a wonderful dinner. I would love to get the recipe for your lentil loaf since I mostly cook vegetarian and am always looking for good main dishes. And the shitake gravy sounds delicious too!

A reducie for Miss Trix tonight, and no catching up on sleep for beans....

Geogia - I'll PM you the recipe for the lentil loaf. This was the first time I made it...it was really good, and I was pleasantly surprised that it actually did stay in loaf form when I popped it out of the pan!
